                                        Zucchini and sweet potato recipe

Ingredients

 

  • butter (Ghee) or coconut oil- 2 tbsp
  • eggs-8
  • large sweet potato, peeled and cut in slices-1
  • sliced zucchinis-2
  •  sliced red bell pepper-1
  • fresh parsley- 2 tbsp
  • Salt and pepper to taste.

Preparation

First Heat a pan at a medium-low heat then add the oil. When the oil gets heat add the sliced potatoes and cook until it gets soft. Add zucchini and the red bell peppers and cook well.  While the veggies are getting ready whisk the eggs properly and add salt and pepper to the whisked egg. Pour your mixture into the pan and cook it on low heat for 10 minutes. Your frittata is ready to serve. Cut into wedges and sprinkle the coriander leaves on it.
