- 3 cups of prepared pulled pork
- 2 cups shredded butternut squash
- 2 tbsp bacon fat, plus additional as needed
- ½ cup preferred BBQ sauce
- Salt & Pepper, to taste
- Garnish: thinly sliced red onion
take a large skillet and warm the pulled pork with the bacon fat until the pork crisps slightly. Now remove the pork from the skillet and set it aside in a dish for later. Now just add little bacon fat and if the pan becomes dry, now reduce the flame. Now add the shredder butternut squash and season it with the salt and pepper. This gives extra taste and flavor to the dish. Sauté the squash until it softens and takes on a little color — careful not to burn it though! 3-4 minutes is about the right amount of time. Meanwhile, add the BBQ to the reserved pork and mix it well. Now after the squash softened and become brown a bit. Now add the sauced pork to the pan and mix it well. Now finally turn off the heat and top it with the sliced onions and serve it.
