Ingredients

  • Grass-fed beef rump roast- 1 3-3/1/2 pound
  • Garlic cloves- 3-4 finely chopped
  • Extra virgin olive oil- 1 tbsp
  • Freshly ground black pepper
  • Yellow onion chopped -1
  • Freshly minced garlic- 2 cloves
  • extra virgin olive oil – 2tbsp
  • unsalted beef bone broth- 32 ounces
  • sulfite free red wine- ¼ cup
  • carrots- 4
  • celery -4 stalks
  • parsnip- 1 medium size
  • cabbage- 2 cups
  • fresh kale leaves- 2 cups
  • fresh Parsley- 1 bunch
  • fresh rosemary- 2 springs
  • fresh thyme leaves- 3
  • bay leaves-2

Prepare the beef roast in preheated oven to 375 degrees  F at normal room temperature. Pat the roast with the paper towel to make it dry. Cut the roast into small incisions then tuck the chopped garlic into the each cut. Rub olive oil all over the roast and sprinkle black peppers all over the roast.  Place the roast in the shallow roasting pan and roast it for 30 minutes. Reduce the oven temperature to 225 degrees while roasting the beef.

If necessary roast the beef for another 1 to 1 ½ hour at 135 degree. Then slice the meat and keep the bone separate. Now place the remaining bones into the slow cooker. Heat and medium sized pan and add 2 tbsp of olive oil add onions and garlic. Sauté it well until it gets tender. Now add the beef, bone broth, vinegar, carrots, celery, yam, wine, and parsnip. Cover the lid and cook it over the low heat for at least 2 hours.  Your Paleo Irish stew is ready to eat.
